Toshitaka (Seki)

Toshitaka — Japanese Knife Craftsmanship from Seki

Based in Seki, Gifu Prefecture, Toshitaka is a small Japanese knife workshop with a history built on decades of experience. Its story brings together the skills of founder Toshio Tamada and the next generation of craftsmanship under Takafumi Tamada.

Rooted in Seki’s Blade-Making Heritage

Seki’s reputation for blade making stretches back approximately 800 years. The area’s water, clay and charcoal attracted swordsmiths, helping it develop into one of Japan’s renowned centres of sword production.

Over the centuries, this knowledge evolved into the manufacture of kitchen knives and other cutting tools. Toshitaka works within this tradition, connecting the region’s blade-making heritage with knives made for today’s kitchens.

A Lifetime Dedicated to Knives

Toshio Tamada began his apprenticeship with an established knife maker in 1940, at just twelve years old. After a long career in the trade, he founded his own business, Cutlery Tamada, in 1992.

His dedication earned recognition from the city of Seki in 2014, when he received an award for technical excellence. He concluded his career in 2020 at the age of 91, after almost eighty years devoted to kitchen knives.

Passing Skills to the Next Generation

Takafumi Tamada began training under Toshio in 2000. The business adopted the Toshitaka name in 2004, and Takafumi took over its leadership in 2015.

The workshop expanded into professional gyuto production in 2006 and high-quality chef’s knives in 2007. A further development project focused on high-performance chef’s knives began in 2018.

A Specialist Workshop

Toshitaka’s production includes professional gyuto knives, chef’s knives and Japanese-style butcher’s knives. The workshop also manufactures knives for other brands through OEM production.

Having celebrated its thirtieth anniversary in 2022, Toshitaka continues a story shaped by practical experience, specialist knowledge and skills passed from one maker to the next.
