Toshitaka Kiritsuke Blade — 180 mm — VG-10

Create your own Japanese kitchen knife with this standalone Kiritsuke blade from Toshitaka. Featuring a blade length of 180 mm and VG-10 stainless steel, it is supplied without a handle, allowing you to choose a compatible handle and personalise the finished knife.

Toshitaka is based in Seki, Japan, a city with a centuries-old tradition of sword and kitchen knife making. The workshop builds on specialist knowledge passed from one generation of knife makers to the next.

The Kiritsuke: a distinctive Japanese blade shape

The Kiritsuke is recognisable by its sharply angled, pointed tip, commonly known as a K-tip. This shape gives the knife a distinctive appearance and provides control for precise cutting tasks.

At 180 mm, this blade offers a manageable size for everyday ingredient preparation. Its pointed tip is useful for detailed work, such as scoring vegetables and carefully trimming ingredients.

VG-10 stainless steel

VG-10 is a Japanese blade steel developed by Takefu Special Steel for high-quality cutting tools. It combines a high carbon content with chromium, molybdenum, vanadium and cobalt. This composition supports high hardness, good wear resistance and a fine, durable cutting edge.

Its chromium content provides good corrosion resistance, making VG-10 less demanding to maintain than non-stainless carbon steel. Nevertheless, the blade should always be cleaned and dried thoroughly after use. Suitable Japanese waterstones are a good choice for maintaining its cutting edge.
