Motosuke Nagao Higonokami, Hammer Forged Aogami,
This Japanese Higonokami knife has a core of Japanese Aogami # 1 "Blue paper" carbon steel (non-stainless) that is hammer forged with the Sanmai technique. With this technique the hard core steel is clamped between 2 parts softer steel for protection. The blade has a Kurochi (black) forging layer to protect against rust. This double-sided sharpened knife is completely forged by hand by the only master smith who is allowed to make Higonokami knives (Motosuke Nagao). The blade is sturdy and manually sharpened and is very easy to sharpen yourself.
Note that the stated length has been measured incl. The Chikiri (lever), the cutting length of the blade for this type of knife is approximately 80 mm. This is measured according to the traditional Japanese method.
