Chozaburo x Hinoura santoku, 165 mm,

Handforged blade made of non-stainless steel with a core of extremely hard Japanese Shirogami #2 White steel. This knife is completely hand-forged by Mutsumi-san (the son of Tsukasa Hinoura (1956)) and is unique in its kind, this knife is completely hand-forged. The blade is thin and manually sharpened and has no thickenings, making sharpening very easy. A santoku is a double-sided sharpened knife and is suitable for cutting and embossing meat, fish, vegetables and fruit. It is one of the basic knives of the Japanese chef.

Chozaburo is a brand of Babacho Hamono and has its knives made by Mutsumi Hinoura san and Toshihiro Wakui san.

The handle is made of burnt chestnut wood. A special feature is that the handle remains rough when it becomes damp. The handle is oval (suitable for left and right-handed use).

The Hinoura family is a very famous family of blacksmiths from Sanjo (Niigata). The family started making knives more than 120 years ago. Tsukasa Hinoura san is the 3rd generation and is known worldwide for its excellent knives and is considered one of the best knife makers both in Japan and abroad. His son Mutsumi Hinoura is the 4th generation of knifesmiths and makes, among others, this Chozaburo series
