Sumio Kawamura, Gyuto (chef’s knife), 210 mm, Sanmai, Shirogami #1 core, -non-stainless cladding - sharpened.

Japanese blade with a core of hand-forged Shirogami #1 (White paper) steel with a non-rust resistant outer layer. This blade is ground and hardened. The knife has a unique and beautiful hammer-blow pattern that is characteristic of the master blacksmith Sumio Kawamura san. We had the honor of visiting Kawamura's forge in 2019. Just outside the city of Sanyo is a small village where the Kawamura family has been forging knives for more than 90 years. Sumio is well over 75 and is the only remaining knifesmith after his father and brother passed away. Sumio has been a knifesmith for 50 years and we ordered a series of knives in 2019 that were not ready until 2023. We hope to make many people happy with these very special knives!

The Nakago (angel) of this knife and the spine and inside of the blade have not yet been polished. In addition, it is sometimes necessary to adjust the sting a bit so that the knife enters the handle straight (this can easily be done by placing the sting in a square slat of 3x3cm with a saw cut and carefully bending it).

BEWARE:  these blades are bare and unfinished blades and might need some additional work like sharpening and straightening to make it into a final functional knife.
