Kagemitsu Kotai 固体 HAP40 Santoku (universal knife), octagonal handle,

Double-sided sharpened and laminated (sanmai) blade made of stainless steel with a core of Japanese HAP40 steel. The blade is extremely thin and manually sharpened and has no thickenings, which makes sharpening on Japanese water stones very easy.

HAP40 is known as one of the hardest semi-stainless steels available today. The steel contains very large amounts of alloy material such as Cobalt, Molybdenum, Vanadium and Tungsten. HAP40 is extremely hard and wear-resistant, but more sensitive to corrosion and chipping than, for example, SG2, VG-10, SLD or SKD11. In addition, HAP40 is difficult to sharpen and therefore difficult to process by manufacturers, so it is very difficult to find kitchen knives made with this steel. Due to our unique collaboration with a small knife smith in Japan, we can now offer this HAP40 line.

Like all Japanese knives, the Kagemitsu knives are not dishwasher safe, cleaning and drying after each use is the best treatment for these exclusive products.
