Imanishi Bester professional whetstone,

High quality Japanese water stone from Imanishi with a grain size of # 1200 grit. Bester water stones, manufactured by Imanishi in Kyoto, Japan, are highly regarded by professionals. Grinding on these Imanishi stones is most similar to grinding on natural stones. These medium hard stones do not need much water and will grind quickly. When sharpening you can hear and feel the effect of stone on the blade. When you check your work you will be surprised by how much metal the stone has removed.

These stones must first be immersed in water, 5-10 minutes for the coarse stones is more than enough and the polishing stones (from # 4000) only need to be discussed. These stones are made of ceramic powder with a synthetic resin binder.

The stone dimensions listed are approximate, as Bester stones are usually a few millimeters larger than their nominal size.

Grain size (Grit)
The grain size of Japanese sharpening stones is expressed in a number. The higher the number, the finer the abrasive grain and the sharper the result. Basically there are 3 types of stones:

  • Sharpening stones (Japanese grain size 80-400)
  • Whetstones (400-3000)
  • Polishing stones (3000-30,000)

Which stone to start with depends on the time available and the condition of the knife. If the knife is really blunt or damaged, start with a sharpening stone. Then a whetstone can be used to refine the cut. With a less blunt or undamaged knife, you can immediately start with a whetstone (for example a 1000 or 1200 stone). It is essential to finish with a polishing stone (normally between 4000 and 12000 grit), this is to get the blade razor sharp. The combination between a whetstone (1000 or 1200) with a 4000-12000 polishing stone is in our opinion an ideal starter package. Polishing stones above 8000 grit do not necessarily produce a sharper result, this is also due to the type of steel.
