Blade made of stainless Japanese VG-10 steel with two layers of stainless steel for the outside (Sanmai forged). This knife is completely forged by hand is the forge of Takamura. The Nakago (part of the knife that is in the handle) does not extend all the way to the bottom of the handle, so there is no noticeable transition there and this ensures a very smooth finished handle.
The Japanese version of a chef's knife is called "Gyuto" and has the same cutting characteristics as a French model chef's knife.
