Chinese-style vegetable knife (Chinese Cleaver) made from Japanese carbon steel (mono-steel). This knife is intended for embossing vegetables and for cleaving meat. (not suitable for splitting bone and bone, you must use a Deba for this). The blade is manually sharpened and has no thickening which makes grinding very easy. These special vegetable knives are forged in a small forge in Seki (Japan).
