This Japanese chef's knife has a core of Japanese VG-10 steel with a beautiful damask steel outer layer. This steel is seen as one of the best stainless steels for kitchen knives because it is well resistant to chipping and is easy to grind yourself. This blade is hardened to the top of the range for VG-10 steel without causing brittleness. The blade is easy to grind yourself and requires little maintenance because the blade is rust-resistant. This double-sided sharpened knife has a very nice Megumi hammer pattern and is manually sharpened. The blade has no thickenings which makes grinding very easy.
