This Japanese sashimi / fish knife has a core of Japanese Shirogami # 1 "white paper" non-stainless carbon steel with a very nice rust-resistant outer layer. The double-sided sharpened blade is highly polished. Completely forged by hand by master blacksmith Nishida-san, this knife is one of a kind. Nishida-san (1982) is a young so-called solo blacksmith, he makes all parts of the knife himself, also polishing and grinding is done by Nishida-san himself in his small forge in Kumamoto. The blade is sturdy and manually sharpened and has no thickenings, which makes sharpening very easy. A Sujihiki has been developed for filleting fish and preparing sashimi and sushi. Due to the length, pieces of Sashimi can be cut in 1 stroke, creating a nice straight cut.
