Particularities

These stones have a relatively large moisture absorption. The stone must first be submerged for at least 5 minutes in hard-warm water.
Allow it to air dry after use and do not expose it to temperatures below 0 or above 40 degrees Celsius.
Relatively hard stones so few problems with "bite" and extra long life.
Steel and stone residue should not be rinsed during grinding, this has an extra grinding effect.
During grinding, the stone must be sprinkled regularly with water.

Grain size (Grit)
The grain size of Japanese grinding stones is expressed in a number. The higher the number, the finer the abrasive grain and the sharper the result.
Which stone you start depends on the time you have and the condition of the knife. If the knife is really blunt or has damage then you can start with a very rough stone (200-600), then you can go one step higher each time. With a less blunt knife you can start with a 1000 grit stone. In all cases you must finish with a finish on a 6000-10000 stone, this is meant to get the knife razor sharp.
