Kurosaki Fujin VG-10 Nakiri,

This Japanese vegetable knife has a core of rust-resistant Japanese VG-10 with an outer layer of rust-resistant damask steel (patterned steel). VG-10 steel is one of the most commonly used steels in Japanese kitchen knives. The steel is characterized by a high hardness and high toughness without the steel being brittle. This steel is perfect for regular use in the kitchen and is easy to sharpen. This double-sided sharpened knife has a very nice hammered pattern. Completely hand-forged by master blacksmith Yu Kurosaki, this knife is one of a kind. The blade is very thin and manually sharpened and has no thickenings, which makes sharpening very easy.

  • Blade length: 160 mm
  • Total length: 310 mm
  • Weight: 158 grams
  • Steel type: core steel: Japanese VG-10 steel (rust resistant) with 2 layers of stainless damask steel with special Fujin hammered pattern.
  • Hardness: 60-61 (Rockwell C)
  • Handle: octagonal American cherry wood and body of black Pakka wood.

Like all Japanese knives, the handmade knives from Kurosaki are not dishwasher safe, cleaning and drying after each use is the best treatment for these exclusive products.
