Takamura R2 Mikagi Petty (office knife), 130 mm
Takamura R2 Petty (office knife), 13 cm blade
Blade made of stainless steel Japanese R2 (SG2) powder steel with two layers of stainless steel for the outside (Sanmai forged). This knife is completely forged by hand is the forge of Takamura. Takamura is one of the more famous knife makers and a number of well-known top chefs cut with Takamura knives such as John Emerson, Gordon Ramsay, Ren`e Redzepi, Mark Best, David Chang, Narisawa and Hiromi Yamada. Japansemessen.nl is very pleased to now be able to offer these knives on the Dutch market for a very special introductory price.
Normally, R2 powder steel can be hardened to a hardness of 65-66 Rockwell, but Takamura has opted for a hardening of 63-64 Rockwell for this professional line. This makes it easy to sharpen the blades yourself.
Another aspect is that the Nakago (part of the knife that is in the handle) does not extend all the way to the bottom of the handle, so there is no noticeable transition there and this ensures a very smooth finished handle.
A Petty is suitable for the smaller peeling and cutting jobs and for preparing fish and meat.
