Tsutomu Kajiwara Sumi Santoku,

This Japanese Santoku knife has a core of Japanese Aogami # 2 "Blue paper" non-stainless carbon steel with a very nice damask pattern. The blade is sharpened on both sides. This knife is completely forged by hand by the young master smith Tsutomu Kajiwara and is unique in its kind. The blade is fairly thick and sharpened manually and has no thickening which makes grinding very easy. A Santoku literally means "three virtues" and indicates that this knife is suitable for meat, fish and vegetables.
