Miki M505 Yanagiba, 210 mm,

This traditional Japanese yanagiba knife has a blade made of Japanese VG-1 carbon steel (semi-stainless). This single-sided sharpened knife is completely hand-forged by Miki Hamono's forge and is unique in its kind. A Yanagiba knife is the typical Japanese filleting knife, because of its shape this knife is extremely suitable for filleting and cutting meat and fish and extremely suitable for preparing Sashimi. Because this knife has a Mune-machi (notch in the blade when entering the handle), the length is traditionally measured from the machi, so the blade is somewhat shorter than the "regular" yanagibas of the same length that are measured from the Ago (back point).

  • Blade length: 210 mm (measured from blade)
  • Total length: 345 mm
  • Weight: 122.7 grams
  • Steel type: core steel: Japanese Takefu VG-1 steel, Sanmai forged (single-sided sharpening)
  • Hardness: 60-61 (Rockwell C)
  • Handle: D-shaped handle of light brown rosewood with black Pakka wooden bolster.
  • NOTE: this knife is only suitable for right-handed use.

Like all Japanese knives, the handmade knives from Miki Hamono are not dishwasher safe, cleaning and drying after each use is the best treatment for these exclusive products.
