The Santoku: a versatile Japanese kitchen knife
The Santoku is an all-purpose kitchen knife suited to preparing vegetables, fish and boneless meat. Its name means “three virtues”, commonly associated with these three uses.
The relatively flat cutting edge suits controlled chopping and forward push-cutting. The broad blade provides space for guiding the knife with the knuckles of your supporting hand. At 180 mm, this model offers a practical size for everyday preparation, from finely chopping herbs to slicing vegetables and portioning meat.
VG-10 stainless steel
VG-10 is a Japanese blade steel developed by Takefu Special Steel for high-quality cutting tools. It combines a high carbon content with chromium, molybdenum, vanadium and cobalt. This composition supports high hardness, good wear resistance and a fine, durable cutting edge.
Its chromium content provides good corrosion resistance, making VG-10 less demanding to maintain than non-stainless carbon steel. Nevertheless, the blade should always be cleaned and dried thoroughly after use. Suitable Japanese waterstones are a good choice for maintaining its cutting edge.
