Kagemitsu Minogawa Ginsan #3 Santoku Blade — 170 mm

This Japanese santoku blade from Kagemitsu Minogawa features a Ginsan #3 stainless steel core and corrosion-resistant outer cladding with an attractive tsuchime (hammered) finish. The blade is already hardened and sharpened, ready for use once a suitable handle has been securely fitted.

A versatile Japanese kitchen knife

The santoku is an all-purpose kitchen knife suited to preparing vegetables, fish and boneless meat. Its name means “three virtues”, commonly associated with these three uses. The relatively flat cutting edge suits controlled chopping and push-cutting, while the broad blade provides space for guiding the knife with your knuckles. At approximately 170 mm, this blade offers a practical size for everyday food preparation.

Ginsan #3 stainless steel

Ginsan #3, also known as Silver #3 or Gingami #3, is a Japanese stainless blade steel from Proterial, formerly Hitachi Metals. It combines the ability to take a fine, sharp edge with the convenience of good corrosion resistance. It is also appreciated for its straightforward maintenance and ease of sharpening, making it an appealing choice for cooks who regularly maintain their knives on whetstones.

Its carbon content supports hardness and cutting performance, while chromium provides corrosion resistance. Although stainless, the blade should still be washed and dried promptly after use.
