Tsubo Yoshikane Serrated Knife for Frozen Products
These very special knives, made in Japan by Yoshikane, are unique because they are designed for cutting frozen products. Frozen food knives (called "reitō bōchō" in Japanese) are made with fairly aggressive serrations. These serrations allow the knife to cut through even deeply frozen meat & fish with ease. The cutting is done with a sawing action.
The blade of this knife is made of rust-resistant Japanese AUS8 steel and has a durable black pakkawood handle. These knives are produced for the Japanese market and are now available in Europe for the first time.
