Nigara STRIX Tsuchime Migaki Sujihiki

At the heart of every STRIX knife is STRIX Powder Steel, one of the hardest stainless steels in the world. This steel can be sharpened to a razor-sharp edge and retains its sharpness exceptionally well thanks to a hardness of 65 HRC. The core is surrounded by 32 layers of softer stainless steel, forged with a unique finish. The subtle hammer marks (dimples) in these layers help prevent food from sticking while cutting, making kitchen work smoother and more enjoyable.

This blade is supplied without a handle, giving you the option to fit your own handle or select a beautiful handle from our exclusive collection—so you can create a truly unique knife.

The Sujihiki is a Japanese slicing knife designed for long, clean cuts with minimal resistance. Its narrow, extended blade glides smoothly through meat and fish, producing beautiful, even slices without tearing or dragging. This makes the Sujihiki perfect for carving roasts, brisket, and roulades, as well as portioning fish and neatly slicing steaks and larger cuts for presentation.
