Kagemitsu Tatsumaki santoku

Double-sided, laminated (suminagashi) stainless steel blade with a core of Japanese AUS10 steel with a beautiful Damascus outer layer. The blade is extremely thin and hand-sharpened, with no thickening, making it very easy to sharpen on Japanese water stones. 

The Santoku knife is a true all-rounder in the kitchen — designed for slicing, dicing, and chopping with precision and ease. Originating from Japan, its name means “three virtues,” referring to its versatility with meat, fish, and vegetables. The wide blade and fine balance offer exceptional control, making it a favorite among both home cooks and professional chefs.

These knives are made in Echizen, Japan. The steel is forged between two layers of softer steel. This outer layer is made of pattern-welded steel, which creates a beautiful vortex pattern. This ensures that the core steel is well protected against potential damage and oxidation. The name on the blade is Tatsumaki, which literally means "Tornado." These knives can also be ordered without a logo, and you can have your own name engraved if desired. These blades are supplied without a handle.
