Takamura VG-10 Gyuto Tsuchime
Blade made of stainless Japanese VG-10 steel with two layers of stainless steel on the outside (Sanmai forged) featuring a beautiful hammered pattern (Tsuchime). This knife is completely hand-forged in Takamura's forge. Takamura is one of the most renowned knifemakers, and several top chefs, such as John Emerson, Gordon Ramsay, Ren'e Redzepi, Mark Best, David Chang, Narisawa, and Hiromi Yamada, use Takamura knives.
The nakago (the part of the blade that sits in the handle) doesn't extend all the way to the bottom of the handle, eliminating a noticeable transition and resulting in a very smooth handle finish.
