Konosuke GS+ wa-gyuto, 240 mm, SLD steel.
This is the improved version of the original GS series. The blade is double-sided and made of special Japanese SLD magic steel. The blade is extremely thin and manually sharpened and has no thickenings, which makes sharpening very easy. The handle is octagonal and made of Japanese honoki wood with ebony bolster. The new GS+ series distinguishes itself from the original GS series by a slightly higher Rockwell hardness, a slightly higher blade and a better finish. The knife is designed for cutting fish, meat and vegetables and is the best-selling model kitchen knife.
These blades have so called "Machi" which is the small gap between the handle and the blade. This small Neck is seen on many knives from Sakai and is very traditional for certain regions. Traditionally when a knife has a Machi the length of the blade is measured from the Machi gap to the tip. The blade edge is always a bit shorter.
