Kagemitsu Kanto Santoku
Double-edged, sharpened, and laminated (Sanmai) stainless steel blade with a Japanese VG-1 steel core. The blade is extremely thin and hand-sharpened, with no thickening, making it very easy to sharpen on Japanese water stones.
These knives are made in the Ishizuchi forge in Japan. The VG-1 steel is forged between two layers of softer steel. This outer layer is made of softer steel and ensures that the core steel is well-protected against potential damage and oxidation.
You can order this knife with or without a Kagemitsu engraving (or with your own name in Kanji).

This region is the most densely populated in Japan and encompasses the major cities of Tokyo and Yokohama. The name contrasts with "Kansai" (関西), which means "west of the barrier."
