Zakuri Aogami Petty Knife 15 cm

Blade of traditional Japanese non-stainless Aogami #2 "Blue Paper" steel with two layers of soft iron on the exterior. This knife is entirely hand-forged at the Echizen-Kintaro forge.

Aogami steel is a widely used traditional Japanese steel. Due to its high carbon content and high purity, it is exceptionally hard yet easy to sharpen yourself. This steel is somewhat more susceptible to chipping and damage, but with proper care, it stays sharp for an extremely long time. Because it is not a rust-resistant steel, a patina can develop on the blade, and improper use can lead to rust. The patina does not negatively affect the cutting experience and is easily removed with a scouring pad or polishing paste. However, some people appreciate the special patina effect and are careful when removing it.
