These Japanese-made knives from Shimomura have a very good price/quality ratio. The blade of this knife is made of rust-resistant Japanese High-Carbon 'Hitachi Yasuki Forged' steel (mono steel) and has a traditional Japanese handle of untreated Honoki wood. This universal knife is suitable for chiseling vegetables and herbs, but also for cutting meat and fish and is seen as a universal knife in Japanese cuisine. The blade is double-sided and has a faux hamon.
