This Japanese vegetable knife has a core of Japanese VG-XEOS Semi-stainless steel. This new steel was developed by Takefu as a counterpart to the well-known HAP40 steel. This steel is considered one of the best steel types for kitchen knives. This double-sided sharpened knife is Sanmai forged with a stainless steel protective layer. VG-XEOS steel is one of the hardest types of steel and is therefore more sensitive to chipping and damage. This knife is completely hand-forged by master blacksmith Yu Kurosaki and is unique in its kind. The blade is very thin and manually sharpened and has no thickenings, making sharpening very easy.
