Anryu Aokami Super Tsuchime Kuroichi Nakiri (vegetable knife), 170 mm
Anryu Aokami Super Tsuchime Nakiri
This Japanese vegetable knife has a core of Japanese Aogami Super carbon steel with a softer carbon steel protective layer on the outside, featuring a beautiful hammer finish (Tsuchime) and a black protective layer (Kuroichi). This forging method is called Sanmai and is found only in knives forged in Japan. This knife is entirely hand-forged by master smith Ikeda-san at the Anryu forge (Ikeda is the successor to Katsushige Anryu, who retired from forging due to his advanced age). Aogami steel is extremely hard yet easy to sharpen on Japanese water stones.
