Kagemitsu 職人技 Shokunin-waza

This Japanese santoku knife has a core of Japanese SRS13 powdered steel with a protective layer (Sanmai) on the outside. This double-sided sharpened knife is provided with a protective layer of soft stainless steel. The blade is very thin and manually sharpened and has no thickenings which makes sharpening very easy.

SRS13 Steel

Developed by Nachi-Fujikoshi, SRS13 is an advanced powder metallurgy super stainless steel capable of being heat-treated to an impressive HRC64. Known for its exceptional sharpness and cutting performance, it can be honed to a razor-sharp edge. However, many artisans intentionally avoid pushing it to maximum hardness, opting instead for a balance that ensures greater flexibility. Compared to SG2/R2 steel, SRS13 is less prone to chipping, making it a reliable choice for demanding cutting tasks.
