Kogetsu Honesuki (Boning Knife),
Double-sided sharpened blade made of stainless Japanese Mo-V steel. The handle is made of hollow 18-8 stainless steel and this makes the knife resistant to sterilization processes (no chlorine). The blade is extremely thin and manually sharpened and has no thickenings which makes sharpening very easy.

Because these knives are made of stainless steel, it is occasionally possible to clean or sterilize the knife (in a dishwasher or sterilizer). Cleaning and drying after each use is the best treatment for these exclusive products.
