Takamura R2 Santoku (universal knife)

Blade made of stainless Japanese R2 (SG2) powdered steel with two layers of stainless steel on the exterior (Sanmai forged). This knife is completely hand-forged in Takamura's forge. Takamura is one of the most renowned knife makers, and several top chefs use Takamura knives, including John Emerson, Gordon Ramsay, Ren'e Redzepi, Mark Best, David Chang, Narisawa, and Hiromi Yamada. Normally, R2 powdered steel can be hardened to a hardness of 65-66 Rockwell, but for this professional line, Takamura has opted for a hardness of 63-64 Rockwell. This also makes the knives easy to sharpen yourself.

Another aspect is that the nakago (the part of the knife that sits within the handle) doesn't extend all the way to the bottom of the handle, eliminating a noticeable transition and resulting in a very smooth handle finish.

A Santoku is suitable for all tasks. Designed for cutting fish, meat, and vegetables, it's a hybrid between a chef's knife and a nakiri (vegetable knife).
