Mutsumi Hinoura Tsuchime Nakiri, 165 mm,

Hand forged blade of non-stainless steel with core of extremely hard Japanese Shirogami # 2 White steel. This knife is completely forged by hand by Mutsumi-san (the son of Tsukasa Hinoura (1956)) and is unique in its kind, this knife is completely forged by hand. The blade is thin and manually sharpened and has no thickenings, which makes sharpening very easy. A Nakiri is a double-sided sharpened vegetable knife and is suitable for cutting and embossing fruit and vegetables is one of the basic knives of the Japanese chef.

The handle is made of the burnt chestnut wood. The handle is D-shaped (suitable for right-handed use).

The Hinoura family is a very famous family of blacksmiths from Sanjo (Niigata). The family started making knives over 120 years ago. Tsukasa Hinoura san is the 3rd generation and is known worldwide for its excellent knives and is considered one of the best knife makers in Japan and beyond along with Teryasu Fujiwara and Keijiro Doi.
