Zakuri Aogami #1 Gyuto (chef knife), 210 mm
Zakuri Aogami Gyuto 21 cm,
Blade of traditional Japanese non-rustproof Aogami # 1 "Blue Paper" steel with two layers of soft iron for the outside. This knife is completely hand-forged in the Echizen-Kintaro smithy. Aogami steel is a widely used traditional Japanese steel, because of its high carbon content and high purity, this steel is particularly hard and yet easy to grind yourself. This type of steel is somewhat more sensitive to chipping and damage, but with some good care this steel type remains extremely long. Because it is not a rust-resistant type of steel, a patina can form on the blade, and rust can occur if improperly used. The patina has no negative effect on the cutting experience and is also easy to remove with a scourer or polishing paste. However, there are people who appreciate the special patina effect very much and are just careful to remove it.
