Brieto-PRO M1203 Gyuto (Chef's knife) 270 mm
Brieto-PRO M1204 Chefs knife,
Double-sided sharpened blade made of stainless Japanese Mo-V steel with dents in the blade to prevent sticking. The handle is made of hollow 18-8 stainless steel and this makes the knife resistant to sterilization processes (no chlorine). The blade is extremely thin and manually sharpened and has no thickenings which makes sharpening very easy.
A Gyuto (literally "Cow knife") is the Japanese equivalent of the western chef's knife. These knives have been developed for cutting meat and fish, but can also be used to cut vegetables and fruit.
- Blade length: 270 mm
- Total length: 410 mm
- Weight: 216 grams
- Blade thickness (measured on the back 1 cm from handle): 1.8 mm
- Steel type: Japanese Mo-V stainless steel with "dimples" (dents in the blade to prevent sticking).
- Hardness: 58-59 (Rockwell C)
- Handle: 18-8 stainless steel, hollow equipped with "golf ball" dents so that it remains stiff if the handle is damp.
Like all Japanese knives, the Brieto knives are not suitable for daily dishwashing. Because these knives are made of stainless steel, it is occasionally possible to clean or sterilize the knife (in a dishwasher or sterilizer). Cleaning and drying after each use is the best treatment for these exclusive products.
