Masakage Mizu Gyuto,

This Japanese chef's knife has a core of non-stainless Japanese Aogami # 2 Blue carbon steel. This double-sided sharpened knife has a blue / black Kurochi pattern which gives the knife a watery sheen, hence the name Mizu which means "water" in Japanese. This knife is completely hand forged by master smith Katsushige Anryu and is unique in its kind. The blade is very thin and sharpened manually and has no thickening, which makes grinding very easy. A Gyuto is the typical Japanese chef's knife and literally means "Cow Knife" (Gyu is cow and To is cutting).

  • Blade length: 210 mm
  • Total length: 365 mm
  • Weight: 177 grams
  • Steel type: core steel: Japanese Aogami # 2 Blue steel with 2 layers of non-stainless steel with black Kurochi protective layer.
  • Hardness: 62-64 (Rockwell C)
  • Handle: Oval Japanese cherry wood and head of beautifully marbled plastic.
  • PLEASE NOTE: each knife is unique and may differ slightly in finish and appearance from the copy on the photo. This deviation is purely cosmetic.

Like all Japanese knives, the handmade Masakage knives are not dishwasher safe, cleaning and drying after each use is the best treatment for these exclusive products.
