Takamura R2 Gyuto (chef's knife),

Blade made of stainless steel Japanese R2 (SG2) powder steel with two layers of stainless steel for the outside (Sanmai forged). This knife is completely forged by hand is the forge of Takamura. Takamura is one of the more famous knife makers and a number of well-known top chefs cut with Takamura knives such as John Emerson, Gordon Ramsay, Ren`e Redzepi, Mark Best, David Chang, Narisawa and Hiromi Yamada. Normally, R2 powder steel can be hardened to a hardness of 65-66 Rockwell, but Takamura has opted for a hardening of 63-64 Rockwell for this professional line. This makes it easy to sharpen the blades yourself.

Another aspect is that the Nakago (part of the knife that is in the handle) does not extend all the way to the bottom of the handle, so there is no noticeable transition there and this ensures a very smooth finished handle.

The Japanese version of a chef's knife is called "Gyuto" and has the same cutting properties as a French model chef's knife.
