Kagemitsu Minogawa Nakiri

Double-sided, sharpened and laminated (Sanmai) blade made of non-stainless steel with a core of Japanese Aogami Super steel (Blue paper steel). The blade is extremely thin and hand-sharpened without a thickening, making it very easy to sharpen on Japanese water stones. The nakiri is a traditional Japanese vegetable knife designed for fast, precise, and comfortable cutting. Thanks to the straight blade, you can effortlessly create crisp slices and fine brunoise, while the tall blade provides extra knuckle clearance and is convenient for scooping cut vegetables. The nakiri is ideal for everything from cabbage, carrots, and onions to herbs and soft vegetables. A true favorite for those who cook a lot of fresh food and value control and speed in the kitchen.

These knives are made in Echizen, Japan. The Aogami Super core steel is forged between two layers of softer steel. This outer layer is made of hammered steel, which creates a beautiful Tsuchime pattern, preventing products from sticking to the blade. It also ensures that the core steel is well-protected against potential damage and oxidation.
