Nigara STRIX Tsuchime Migaki Sujihiki

At the heart of every STRIX knife lies STRIX Powder Steel, one of the hardest stainless steels in the world. This steel can be sharpened to a razor-sharp edge and retains its edge exceptionally long thanks to a hardness of 65 HRC. The core is surrounded by 32 layers of softer stainless steel, forged with a unique finish. The subtle dimples in these layers prevent food from sticking while cutting, making kitchen work smoother and more enjoyable.

The knife is finished with an octagonal handle crafted from ebony and black buffalo horn. This not only gives it a luxurious appearance but also ensures perfect balance and a comfortable grip, making the knife feel like a natural extension of your hand.

The Sujihiki is a traditional Japanese carving knife specifically designed for cutting meat and fish with long, even strokes. Thanks to its long, narrow blade, the knife glides effortlessly through ingredients without damaging their structure. This makes it ideal for slicing roast meat, filleting fish, or cutting thin slices of carpaccio and sashimi. With its fine balance and sharp edge, the Sujihiki offers maximum precision and an elegant cutting experience. An indispensable knife for those who love perfectly cut meat and fish. Specifications:
