Takamura R2 Gyuto (Chef's Knife)

Blade made of stainless Japanese R2 (SG2) powdered steel with two layers of stainless steel on the exterior (Sanmai forged). This knife is completely hand-forged in Takamura's forge. Takamura is one of the most renowned knifemakers, and several top chefs use Takamura knives, including John Emerson, Gordon Ramsay, Ren'e Redzepi, Mark Best, David Chang, Narisawa, and Hiromi Yamada.

These are the so-called "Special Edition" versions, where one side of the blade is blank so you can add your own logo or name. This is often requested by chefs and retailers.

Normally, R2 powdered steel can be hardened to a hardness of 65-66 Rockwell, but for this professional line, Takamura has opted for a hardness of 63-64 Rockwell. This also makes the knives easy to sharpen yourself.

Another aspect is that the Nakago (the part of the blade that is integrated into the handle) doesn't extend all the way to the bottom of the handle, so there's no noticeable transition there, resulting in a very smooth handle finish.

The Japanese version of a chef's knife is called the "Gyuto" and has the same cutting properties as a French-style chef's knife.
