Takeshi Saji SRS-13 Santoku Knife

This Santoku knife features a core of premium Japanese SRS-13 stainless steel, clad with two layers of hammered stainless steel on the exterior. Each knife is hand-forged by renowned blacksmith Takeshi Saji (born 1949), who has built his reputation primarily through crafting high-quality hunting knives, applying the same rugged style to his kitchen knives. While these knives are fully handcrafted, some minor gaps may appear around the handle due to the artisanal manufacturing process.

The Santoku is a versatile, double-beveled knife ideal for slicing meat and fish, while also excelling at chopping and dicing vegetables and fruits.

Craftsmanship & Material Excellence

Master Takeshi Saji is known for crafting a wide range of high-performance, handmade knives. For this Santoku, he has chosen SRS-13, a premium powdered high-speed steel produced by Sanyo Steel Company. The steel’s fine microstructure and high carbon content provide excellent cutting performance, edge retention, and corrosion resistance, comparable to Japan’s top-tier Aogami Super steel.

These custom SRS-13 knives feature a mirror-polished blade and a distinctive hammered pattern, creating a striking contrast between the reflective blade core and the textured outer layers. The handcrafted Desert Ironwood handle offers a warm, secure grip, reflecting the artisan’s dedication to each stage of production. Unlike mass-produced handles, these hand-shaped handles contribute to a unique and satisfying feel in hand, making each knife a functional piece of craftsmanship.

Each knife is fitted with a polished stainless steel bolster, enhancing durability and providing balanced handling, making it not only visually appealing but also practical and easy to maintain.

The Art of Handle Crafting

Through years of forging traditional outdoor knives, Takeshi Saji has honed his skills in crafting both blades and custom handles. His expertise in shaping ergonomic handles sets his knives apart from many others, ensuring they deliver comfort, durability, and a connection to the artisan’s philosophy with each use.

Why Choose a Santoku?

The Santoku’s tall blade and rounded tip make it exceptionally versatile in the kitchen, suitable for cutting meat, fish, and vegetables alike—hence its name, which translates to “three uses.” It is often recommended as a multi-purpose knife for both professional chefs and home cooks.

Care instructions: Like all high-quality Japanese knives, these handmade knives should not be placed in the dishwasher. For optimal longevity, clean and dry the knife immediately after each use.
