This Japanese universal knife has a core of Japanese Aogami #2 steel (non-rust-resistant steel) with a protective layer (Sanmai) and black Kuroishi forged layer on the outside. This double-sided sharpened knife is completely hand-forged by the master blacksmith Fukushima-san from the Kumamoto Prefecture in Japan (Kyushu Island). The blade is very thin and manually sharpened and has no thickenings, which makes sharpening very easy.

Like all Japanese knives, the handmade knives from Fukushima are not dishwasher safe, cleaning and drying after each use is the best treatment for these exclusive products.
