Kagemitsu ZA18 Petty, 135 cm

This Japanese paring knife has a core of Japanese ZA18 stainless steel with a beautiful protective layer of damascus (layered) steel on the outside. This double-sided sharpened knife has a protective layer of soft stainless steel. The blade is very thin and manually sharpened and has no thickenings, which makes sharpening very easy.

The ZA-18 was specially developed by Osaka Clad Co., Ltd with Aichi Steel Corp to compete or even outperform VG10. It has a similar chemical composition to the VG10, but contains more carbon (1.20 vs. 1.05), chromium (18.0 vs. 15.5), molybdenum (1.5- vs. 1.20) and cobalt (1.80 vs. 1.50) for extra hardness, durability and corrosion resistance. It is a Suminagashi clad construction with AUS-2 outer steel, which is extra strong in bending and breaking.
