Hinokuni Shirogami #1 Kuroichi, Cherry handle,

This sturdy Japanese cleaver (also called Chinese cleaver) has a sanmai forged core of Japanese Shirogami #1 (White-paper steel) (non-stainless) carbon steel. This double-sided sharpened knife is completely hand-forged by the young master blacksmith Hinokuni-san (1990) who learned the trade from Nishida-san. The blade is manually sharpened to a razor edge (no polishing required).

A Chuka Hocho is the Chinese version of a universal knife that can be used for the preparation of meat, fish and vegetables. This knife is based on Chinese style splitting knives but is of course made in Japan. It is best described as a nakiri with an extra high blade.

Shirogami (White Paper Steel) #1, is a high purity carbon steel alloy and is a very popular steel for high quality Japanese chef's knives, especially in Honyaki knives. These knives have an extremely fine edge and are easy to sharpen. It is highly reactive so can stain quickly, so wipe and dry after each use! It can also be prone to chipping, so never cut hard or frozen products.
