Kagemitsu Jūrai-gata 従来型 Ginsan #1,

Single-sided sharpened 2-layer blade with a core of stainless Ginsan steel. The blade is thin and manually sharpened and has no thickenings, which makes sharpening very easy. This knife has a D-shaped handle and is therefore only suitable for right-handed use. A Yanagiba knife is the typical Japanese filleting knife, because of its shape this knife is extremely suitable for filleting and cutting meat and fish and extremely suitable for preparing Sashimi. Because this knife has a Mune-machi (notch in the blade when entering the handle), the length is traditionally measured from the machi, so the blade is somewhat shorter than the "regular" yanagiba's of the same length that are measured from the Ago (back point).
