Kajibee Sabi nikui Nakiri Jigata, Kaj-15, 165 cm
This Japanese vegetable knife has a core of Japanese Aogami # 2 carbon steel with a rust-resistant protective layer (Sanmai) on the outside. This double-sided sharpened knife is completely hand-forged by the master blacksmith of Kajibee, Ishikawa-san and is unique in its kind. The blade is very thin and manually sharpened and has no thickening, which makes sharpening very easy.
