Motosuke Nagao Higonokami, Hand Forged Aogami Super,
This Japanese Higonokami knife belongs to the absolute top series of Motosuke Nagao and has a core of Japanese Aogami Super "Blue paper" carbon steel (non-stainless) that is forged by hand with the Sanmai technique. With this technique, the hard core steel is clamped between 2 parts softer steel for protection. This double-sided sharpened knife is completely hand-forged by the only master blacksmith who is allowed to make Higonokami knives (Motosuke Nagao). The blade is sturdy and manually sharpened and is very easy to sharpen yourself.
Please note that the stated length is measured incl. The Chikiri (lever), the cutting length of the blade with a 100mm Higonokami is approximately 75mm. This is measured in the traditional Japanese way.
