Fujiwara san Nashiji Gyuto,

Hand-beaten blade of non-stainless steel with core of extremely hard Japanese Shirogami White #1 steel. This type of steel is a very pure steel type and consists only of iron and carbon, making the knife particularly sharp and easy to grind. The disadvantage is that the steel is more sensitive to chipping. So be careful when cutting products with bones, bone, sand or other hard components.

Dit mes is volledig met de hand gesmeed door Teruyasu Fujiwara en is uniek in zijn soort, het lemmet is voorzien van een bijzonder matte uiterlijk. Het lemmet is dun en handmatig geslepen en heeft geen verdikkingen waardoor slijpen zeer gemakkelijk is. Een Gyuto (letterlijk "koeienmes") is geschikt voor alle klussen. Het mes is ontworpen om zowel vis, vlees als groeten te snijden maar is voornamelijk bedoeld voor vlees en vis. Het handvat is ovaal en dus geschik voor rechts als linkshandig gebruik.
