Takeshi Saji R2

Blade of stainless Japanese R2 / SG2 steel with two layers of softer stainless steel for the outside. This knife is completely hand-forged by the famous master blacksmith Takeshi Saji (1949). Saji-san is best known for its hunting knives and these kitchen knives are made in the same style. The finish is particularly high and the handle is made from Chinese Quince burl. These knives are very special collectibles made by a world famous master smith. These knives are perhaps one of the most beautiful knives in the world. The knives come in a black cardboard Japanese box.

A santoku (literally "three virtues") is a double-edged knife that is primarily intended for cutting meat, fish and vegetables (the three virtues). Due to the high blade, it is also very suitable for embossing. A perfect all-round knife.

  • Blade length: 180 mm
  • Total length: 320 mm
  • Weight: 200 gram
  • Blade thickness (measured from the handle 1 cm): 1.8 mm
  • Blade height: 51 mm
  • Steel type: core steel: stainless Japanese R2 steel (also known as SG2 steel) with 2 layers of stainless steel for the outer layer. The unique "Tsuchime" pattern is obtained by hammering the blade by hand with a special hammer.
  • Hardness: 62-63 (Rockwell C)
  • Handle: brown Chinese Quince burl with steel bolster and two brass layers

Like all Japanese knives, these handmade Takeshi Saji knives are not dishwasher safe, cleaning and drying after each use is the best treatment for these exclusive products.
