Anryu Aokami Super Tsuchime Gyuto 18cm,

This Japanese chef's knife has a core of Japanese Aogami Super carbon steel with a softer carbon steel protective layer on the outside with a beautiful hammer blow (Tsuchime) and black protective layer (Kuroichi). This way of forging is called Sanmai and you will only find it in knives that are forged in Japan. This knife is completely hand-forged by master blacksmith Ikeda-san at the Anryu forge (Ikeda is the successor of Katsushige Anryu who has stopped forging due to his old age). Aogami steel is extremely hard, yet easy to sharpen yourself on Japanese water stones.
