Sakai Shigekatsu Usuba

This beautiful Japanese vegetable knife has a classic single-sided sharpened blade. The knife has a core of Japanese Shirogami carbon steel and a traditional handle of Honoki wood. This knife is completely forged by hand by Shigekatsu-san and is unique in its kind.

A Usuba is the traditional single-sided sharpened vegetable knife from Japan. Due to the straight cut and the hollow backside of the knife, this knife is excellent for embossing. A Usuba is also used for specialized cuts such as katsuramuki, where a vegetable cylinder is peeled into a thin sheet.
